Grandma Cheerio's Oatmeal Cookies
Grandma Cheerio (aka Rosel, mother of Cheerios Lisa and
Sharon), makes the world's best Oatmeal cookies. If you've been on one of
our training walks, then you've sampled the finest! She actually makes two
different recipes, so both are listed below.
Recipe #1
2 cups oatmeal (not instant)
2 cups flour
1 cup sugar
1 1/4 teaspoons baking powder
1 1/4 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
Mix all dry ingredients together
In microwave melt 1 stick margarine
Add to melted margarine:
1/2 cup milk
2 eggs (slightly beaten)
1 teaspoon vanilla extract
Mix all the liquid ingredients with the dry ones
Add:
1 cup raisins
1 cup broken walnuts
1/2 cup chocolate chips
Or any combination of dried fruits and nuts
(For the walk cookies I used cut up apricots, dates, raisins, chocolate
chips, pecans and chopped almonds)
Put on baking sheet in spoonfuls (I used a small ice cream
scoop) and bake at 375 degrees for 12 minutes. Cool on a rack.
These cookies freeze well. Each recipe makes approximately 60 cookies.
Recipe #2
1 cup (2 sticks) margarine or butter softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups oats (quick or old fashioned, uncooked)
1 cup raisins
Heat oven to 350 degrees
Beat together margarine and sugars until creamy
Add eggs and vanilla; beat well
Add combined flour, baking soda, cinnamon and salt; mix well
Stir in oats and raisins; mix well
Drop by rounded tablespoons onto ungreased cookie sheet
Bake 10-12 minutes or until golden brown
Cool 1 minute on cookie sheet; remove to wire rack
Makes about 4 dozen
One box Wheat Chex
One box Multi-grain Cheerios
One bag pretzel sticks
One can Planters cocktail peanuts
One can Planters "hot & spicy" cocktail peanuts
One box Cheez-Its
1 stick margarine
1/4 cup Worcestershire sauce
1/2 tsp garlic powder
Heat oven to 250. Melt margarine and mix in Worcestershire sauce and
garlic powder.
In large roaster pan, put all dry ingredients except the Cheez-Its. Mix.
Slowly pour margarine sauce over top while mixing in. Put in oven, and
stir every 10 minutes. Remove after 30 minutes, and then mix in Cheez-Its.
Store in airtight container.
